One of the most popular cuisines of Himachal is the Kangra Dham. The thali, consists of various types of lentils and vegetables, along with rice, and is served during most celebrations and festivals. This vegetarian meal is usually cooked by boti brahmins. Legend says that the kings of Himachal wanted their meal to be rich like a Kashmiri wazwan but with vegetarian delicacies. To this day, many methods of cooking and ingredients used are common. For example, whole walnuts are burned in the shell and the powder is used to flavour and colour certain gravies. In others, dahi is added during the cooking process the same way it is done for wazwan curries. No surprise that the Kangra regional dham is considered the best of the 4 regions :)

Details

  • Dham is a traditional meal of Himachal, slow cooked on wood fire to really bring in the flavours and aromas as they should be. The traditional style of dham is similar to a 'langar', where people sit on the floor, and eat on leaf plates sans cutlery. The meal is supposed to be completely vegetarian. First rice is served, and then lentils and vegetables, one by one, to be enjoyed with a little portion of rice at a time.
  • We vary this a little bit, by offering the option of Himachali style chicken or mutton as well. We serve this on a thali, so that guests know all the options before starting their meal. They are also seated on the table instead of the traditional floor seating.
