Petisco's pop-up at The Conservatory is here to flip the script on Goan food as you know it. Chef Halton Dsouza is taking traditional Goan flavors and pushing them to the edge, creating dishes that play with texture, flavor, and presentation in ways you’ve never seen. Think of it as Goa, but reimagined—seafood curries with a kick, local bar favorites with a whole new vibe, It’s Goa, but through a fresh, experimental lens.

At The Conservatory, we thrive on experimentation, and this pop-up is all about exploring where Goan cuisine can go next. And what’s a Goan dining experience without the perfect drinks? Petisco’s renowned mixologist, Dev Narvekar, will be curating a special menu of Goa-inspired cocktails, each crafted with locally foraged ingredients and bursting with creativity. From coastal herbs to tropical fruits, every sip will complement the flavors of Chef Halton’s menu and transport you straight to Goa’s rich landscapes.

This pop-up is more than just a meal—it’s an immersive, multi-sensory journey through the evolving world of Goan shack and bar culture.

About chef Halton Dsouza

Chef Halton Dsouza has over 14 years of culinary experience, working across multiple countries. Starting his career in Toronto, Canada, and later in the U.S. and Middle East, Halton has honed his skills and brought global flavors to his plates. He is known for experimenting with new cuisines and flavors, constantly pushing culinary boundaries.

About head bartender - Dev Narvekar

Dev Narvekar began his journey in 2009 at the Goa Marriott. With experience in Australia, New Zealand, and the Pacific Islands, he’s developed a deep passion for both classic cocktails and innovative creations. Now leading the bar at Petisco, Dev continues to explore new flavors while perfecting the art of mixology.

1. The management is not responsible for any injury or damage that may occur during an event

2. Conservatory is located on the 2nd floor of courtyard which is a 44 steps climb up

3. Do not purchase tickets from anyone other than on the ticketing platform.

4. No-shows and cancellations are non-refundable by all means.

5. Tickets are non-transferable and are for personal use only.

6. Children aged 7 and above require a ticket to attend the meal. If you are bringing a child under 7, please inform us in advance, as we do not have a baby seat at the venue.

7. The schedule is subject to change in case of an emergency or any event out of our control.

8. Management will entertain no liability or claims arising due to the consumption or intake of any food or drink.

9. Parking near the event premises is at the risk of the vehicle owner. We have limited paid valet parking at Rs. 200 per car.

10. The holder of this ticket grants organizers the right to use, in perpetuity, all or any part of the recording of any video or still footage made of the holder's appearance on any channel without any further approval.

11. Please note that both vegetarian and non-vegetarian dishes are prepared in the same kitchen.

12. Photographs and videos of ticket holders may be uploaded to social media. If you do not wish to be featured, let our team know.
