Mangalore holds a special place in Chef Velton’s heart—it’s where he’s from and where many of his childhood summers were spent. The food of Mangalore has always been central to his memories, deeply influencing the chef he is today.
Every visit to the city has been a flavorful journey, and Chef Velton’s passion for these distinct tastes has shaped his culinary identity. Now, he’s extending a special invitation to experience the soul of Mangalore through its food—showcasing textures, flavors, and elements that are often overlooked but deserve recognition.
During a recent trip to Bangalore, Chef Velton reconnected with Akhila, another proud Mangalorean who shares his love for this rich cuisine. Their conversation sparked an exciting idea: to bring the essence of Mangalore to The Conservatory for one evening, celebrating the region’s bangin’ dishes with all of you.
This menu is a love letter to Mangalorean cuisine, featuring everything from the classic Baffat and Kadle Bajil to the texture-forward Biscuit Roti and the flavor-packed Sukkha, not to mention the crowd-favorite ghee roast.
