Malnad wedding cuisine, from Karnataka's lush Malnad region, highlights fresh, local ingredients and traditional cooking techniques like steaming, slow cooking, and stone grinding. Known for its rich, vibrant flavors, the cuisine reflects the region's diverse communities, including Havyaka Brahmins, Vokkaligas, and Gowdas. Food habits emphasize seasonal and local produce, primarily vegetarian. Staples like coconut, rice, and jaggery are common. Malnad cuisine is a culinary journey that embodies the essence of home, tradition, and the warm hospitality of the Western Ghats.

Signature Elixirs:

  • Khashaya: A spiced milk drink with ginger and rose petals (vegan option available).

Amuse Bouche:

  • Pathrode: Steamed colocasia leaves rolled with a spicy gram flour mixture, offering a burst of traditional flavors in every bite.

Starters:

  • Kosambari Tostada: Banana stem salad on crispy jackfruit papad, drizzled with green chilli and lemon dressing.

Bisque:

  • Daalitoy with Savoury Sankara Pali: Creamy lentil soup with crispy savoury Sankara Pali.

Main Courses:

  • Aappehuli: A tangy raw mango drink, optionally eaten with rice.
  • Temple Sambar and Anna: Temple-style lentil stew with fluffy white rice.
  • Malnad Kadabu & Halasinakayi Gaasi: Steamed rice dumplings paired with jackfruit curry.

Desserts:

  • Pallada Payasam: Rice pudding with fried cashews, Kerala pappadam, and banana puree, served in a cutting chai glass.
  • Suttavu with Coffee Caramel Sauce: Crispy fried banana dough balls drizzled with rich coffee caramel sauce.
