As the Delhi sun begins to turn warmer, we bring to the table a ritual from coastal Odisha — a meal designed for summer.
Pakhala is not just fermented rice. It is comfort, cooling, seasonal wisdom, and memory served in a bowl.
On 21st & 22nd March, from 12 pm onwards, Rosei Ghara, in collaboration with Kartik’s Kitchen, invites you to experience an Odia summer table — thoughtfully curated, slow, and rooted in tradition.
What to Expect:
At the centre sits Pakhala — lightly fermented rice, cooling and probiotic-rich — accompanied by an abundant spread of classic summer sides. Expect crisp fries, smoky mash, leafy greens, lentil badis, seasonal vegetables, and carefully spiced accompaniments — each dish balancing texture, heat, tang, and crunch.
