Have you ever wondered how a dish came to be? Why do so many variations on a dish exist? Is eating just about sustenance or is there more to it? Is food art? What goes on before food arrives on our plates? What is cuisine?
Come to our curated cooking classes for adults where we delve into ethnographies and histories that document food and eating. Through folk and classical stories, evidence-based narratives and, of course, lots of cooking, we shall attempt to understand cuisine(s), ingredients and the people that create foodways. And we'll bust some myths along the way!
Our classes are beginner-friendly and deal with practical and helpful information and techniques, including: approaching various (and unfamiliar) cuisines, sourcing ingredients and substitutes, developing knife skills, food safety and hygiene, identifying fresh produce, food waste management, meal-prepping, recipe creation/testing, and so on. The meal will be comprised of 4 courses, and the menu is ever-changing based on the (hi)stories we want to speak about, but also on seasonality and availability of produce.
At the end of the session, we'll all sit down together for a family-style meal. It's a great opportunity to meet other wonderful people.
For those who are extra curious: make sure you sign up for our market walks (for an additional 500 rupees) that happen before the cooking classes! Follow us on a stroll through the Panjim mandi, meet our vendors and learn the strange, beautiful histories of our favourite foods.
