Have you ever wondered how or why a dish has come to be in the way it has come to be? Why do so many variations exist? What happens before food arrives on our plates? Can we think of food as art? How does politics shape cuisine? For that matter, what, really, is cuisine?
Join us on our curated cooking classes for adults, where we think and work through these questions and more. Through folk and classical stories, evidence-based narratives and, of course, lots of cooking, we shall attempt to understand ingredients, dishes, food cultures, cuisine(s), and foodways. And, as a bonus, we'll bust some myths along the way!
Our classes are beginner-friendly and deal in practical/helpful information and techniques, including: approaching various (and unfamiliar) cuisines, sourcing ingredients and substitutes, developing knife skills, understanding food safety and hygiene, identifying fresh produce, managing food waste, prepping meals, creating/testing recipes, and so on.
At the end of the session, we'll all sit down together for a family-style meal. It's a great opportunity to meet other wonderful (and possibly weird) people. The meal comprises 4 courses, and the menu is ever-changing based on the (hi)stories we want to speak about, but also on seasonality and availability of produce.
For those who are extra curious: make sure you sign up for our market walks (for an additional 500 rupees) that happen before the cooking classes! Follow us on a stroll through the Panjim mandi, meet our vendors and learn about the strange, beautiful histories of our favourite foods.
